The holiday season is synonymous with lots of food – way too much food, way too many calories. Totally worth it though, right? Well, maybe not all the time. It’s good to eat as healthy as you can whenever possible. Of course, you still want to indulge and enjoy the parties, gatherings and soirees of all kinds, go for it! But when given the chance, a few less calories wouldn’t hurt.
When it comes to celebrating Hanukkah, no party feels truly complete without potato latkes. Whether you eat them plain or with sour cream, apple sauce or a little mix of both, this holiday doesn’t feel right unless latkes are involved. Typically, latkes are greasy, completely fried and totally delicious. However, did you know you can make a healthier version that is still sure to be plenty scrumptious? Yes, really.
I found lots of good “healthier” versions of latkes out there, but one, in particular, stood out to me, and I might even give it a go this year – “might” being the operative word, as I’m not necessarily the best in the kitchen! The one I found is from The Healthy Maven.
Healthy Baked Latkes (Gluten-Free & Vegan!)
Serves about 20 latkes
Prep Time: 20 minutes
Cook Time: 30 minutes
- 1 flax egg (1 T ground flax, mixed with 3 T warm water and let sit for 10 mins)
- 3 medium potatoes, peeled and grated (can use food processor with grater attachment)
- 1 medium onion, grated (can use food processor with grater attachment)
- 1/2 cup rolled oats (gluten-free, if necessary)*
- 1/2 cup oat flour (gluten-free, if necessary)*
- 1 T coconut oil, melted + more for pan
- 1 tsp sea salt
- 1/4 tsp black pepper
- For serving: unsweetened applesauce, sour cream etc.
- Preheat oven to 425 degrees F.
- Spray or rub two baking sheets with coconut oil.
- Make flax egg and set aside.
- Grate potatoes using cheese grater or food processor. Place potatoes inside a dishcloth or cheesecloth to squeeze out liquid. This will remove most of the starch from the potatoes.
- Grate onions and add to potato mixture (no need to squeeze out liquid).
- Add in rolled oats, oat flour, coconut oil, flax egg, sea salt and pepper.
- Grab about a 1/4 cup of the mixture and form into a ball.
- Place on baking sheet and flatten slightly.
- Repeat until all of mixture has been used.
- Place in the oven to bake for 15 minutes. Remove from oven and flip carefully, then bake for another 10-15 minutes.
- Serve warm with desired dipping condiment.
*These can be omitted for a paleo option; however, they may not be as firm.
A Healthy Spin on a Hanukkah Classic
And there you have it! Sounds just as delicious as your regular latkes, right? At least I think so! This is a great alternative to the standard potato latkes – one which your waist line will thank you for. So, if you’re hosting a Hanukkah party or going to one, this might be a nice added surprise for those who also aren’t looking to use up all their calories on one latke (or want to save some for the Hanukkah cookies, which I wouldn’t blame them for!).
